  1. Cut bitter melon.
  2. In a small bowl, give bitter melon massage to remove bitterness with a dash of salt, 1 minute. Add hot water and leave it for 10 to 30 minutes.
  3. Wrap tofu with paper towels and microwave for 2 minutes to remove water.
  4. Cut pork into 2 inch lengths. Sprinkle with salt, pepper and flour to give a base taste.
  5. In a large pan, high heat, pour oil and sauté tofu until golden brown.
  6. In a small bowl, add all the ingredients of ☆
  7. In the same pan, sauté pork, bitter melon and washed bean sprouts, 5 - 7 minutes. Add ☆sauce until the sauce is well mixed.
  8. Add beaten egg in the same pan with other ingredients and scramble the egg, 1 minute. Turn off the heat, Pour sesame oil at the end.

Bitter melon taste "bitter," just as the name suggests. The texture can be either crunchy or soft depending on how you prepare it. I personally love bitter melon nowadays but I really didn't like it until one point when my mother made me a dish called "stir-fry bitter melon with pork" and since then. In this stir-fried bitter melon with eggs dish, in particular, using more eggs will also make the dish more enjoyable.
