  1. Boil boneless chicken with 1/4th tsp salt.This can be shredded or cubed.Set aside.Heat 1 tbsp clarified butter or vegetable oil in a pan.Add chopped onion and lightly toss. Add all chopped vegetables besides green peas and spring onions. Add ginger garlic paste.Add salt and sugar to taste and tomato puree.Toss all and transfer this in a pressure cooker.Add bay leaves.Pressure cook 2 whistles.Mix the boiled chicken and add green peas.
  2. Boil for 5 minutes.Make a slurry with cornflour.Add it to the boiling red beet soup.Sprinkle black pepper powder and finely chopped spring onion.Garnish with chopped parsley.Serve hot with a dollop of sour cream and bread.
