  5. let them bake for 45 minutes, stirring occasionally.
  6. make Wells in the potatoes once they are almost done. add an egg to each well and a pinch of salt and pepper. Top with cheese.
  7. bake for 10 minutes, until eggs are cooked. and cheese is melted.
  8. put tortillas on rack in oven to warm for a minute or two.
  9. assemble burritos and enjoy!
  10. I love to add sour cream and sriracha to my burrito.
