Brush both sides of each bread slice with olive oil, arrange on a broiling pan. In a skillet over medium-high heat, lightly brown the butter. Add the garlic and cook until it is light brown. Add the sage and cook until aromatic.

Instructions to make Corn Cheese Bruschetta:
  1. For cheese spread. On a double boiler add grated cheese, butter cubes and milk. Mix and cook on double boiler untill cheese melts. Remove from boiler and blend with hand blender to a smooth paste. It should be of thick consistency. At this point you can add chilli flakes, pepper powder, garlic powder to make it flavoured.
  2. Take your loaves.
  3. Slice them.
  4. Lightly toast your slices into preheated oven at 180°c for 5 minutes.
  5. Apply some butter, cheese spread. Top with some corn and onions. You can also add other veggies according to your taste. Sprinkle some salt.
  6. Bake in preheated oven at 180°c for 5 mins. - After baking sprinkle some spring onions, chilli flakes, pepper powder and piri Piri mix.
  7. Your Corn cheese Bruschetta it ready to be served.

Add the garlic and cook until it is light brown. Add the sage and cook until aromatic. Remove from the heat and spread one side of the toasted bread with a roasted garlic clove. Divide the ricotta mixture between the four slices and top with the roasted corn and tomato mixture. DIRECTIONS In a medium mixing bowl, add the tomatoes, garlic, basil, vinegar, olive oil, cheese, salt and pepper.
