  2. Prepare 4 cup All purpose flour

  8. Make ready 1 1/3 cup warm water

  14. Prepare 1 medium onion
  15. Make ready 8 oz creme freiche

  18. Take 1/2 tbsp black pepper
  19. Take 1 lb bacon
Instructions to make Flammkuchen:
  1. You can use either style dough. I found that with a brick oven at higher tempatures, the beer flat bread recipe works better. The pizza dough works better in a convection oven.
  2. For beer flat bread: mix flour, salt and beer together. roll into large ball. use rolling pin with lightly floured into a large circle.
  3. For pizza dough: add 1 tbsp yeast to 1 1/3 cup warm water. Let soften for 10 minutes.
  4. add egg, 2 tbsp olive oil, 1 tbsp salt, 1 tbsp sugar (white), mix in bowl.
  5. add 4 cups of flour to yeast mixture. stir with hand until doughie. add flour if too sticky. let rise 30, punch down, rise another 30.
  6. roll dough out pizza style
  7. carmelize onion with sprinkle of olive oil
  8. lightly brown bacon
  9. poor creme freiche onto pizza dough. spread evenly.
  10. season creme with 1 tbsp salt, 1/2 tbsp black pepper, 1 tbsp nutmeg
  11. top with onion and bacon
  12. preheat oven to 450°F
  13. cook in oven for 15 minute or until edge of dough is browned.
