Instructions to make Sausage Stuffed Banana Peppers:
  1. Wash your peppers and slice a slit from the top of the pepper to the bottom. Don't cut of the top or bottom of pepper! Remove the seeds.
  2. Brown sausage with galic and black pepper.
  3. Crush crackers into fine crumbs. I use a large freezer bag and a rolling pin. Add Parmesan cheese and mix well.
  4. When sausage is cooked, drain and mix with cracker mixture. Add melted butter until JUST MOIST!
  5. Preheat oven to 375°F. Pour olive oil, coating evenly, the bottom of your baking dish. Stuff the peppers and place them in your baking dish. Drizzle with a little more olive oil and a sprinkle of garlic powder.
  6. Bake for approximately 30 minutes or until peppers are nice and tender.
  7. Spoon heated tomato sauce over peppers and top with Parmesan cheese. Enjoy! Serve with your favorite pasta or as a delicious appetizer.
