One of the nice things about growing your own vegetables is the amount of variety available. Unfold a puff pastry sheet over a tart pan. Place parchment paper or foil in the center and weight it down with beans or pie weight. These easy roasted vegetables will give your plate a pop of color.

  1. Dice or slice all the ingredients.

  6. Place the phyllo dough into your tart dish..if it is store bought no need to add olive oil to the dish. If you decide to make your own dough you must brush pan with olive oil before placing in the dough.
