  2. sift together the flour, baking powder, sugar, and the salt in a bowl for at least 3 times.
  3. make a well in the center and add the oil, egg yolk, dessicated coconut, water and vanilla extract. beat until smooth and no lumps. set aside.
  4. using a stand or hand mixer, beat the egg whites together with the cream of tar tar and sugar together until stiff.
  5. gently fold the egg yolk mixture to the meringue until well blended, ensuring that you scrape the bottom as you fold.
  6. pour into the prepared ungreased tube pan, and give it a little tap on the bottom the get those bubbles off.
  7. bake until golden brown and the middle springs back when touched for about 45 min.
  8. invert onto the neck of the bottle.
  9. cool completely upside down.
